Inexpensive Superfood Helps Prevent Breast Cancer

A study done at the Harvard School of Public Health found that women who ate this inexpensive food at least twice a month were 24% less likely to develop breast cancer than women who ate it less than once a month.

What is it? The simple lentil.

Not only that, lentils keep blood sugar steady, which cuts back on hunger, so may be an aid in weight loss – while providing protein, fiber, and iron. A quarter cup serving is only 161 calories.

And, a whole pound of lentils costs only about $3.

The package directions say to add the lentils to boiling water, boil for a couple of minutes and then reduce the heat and simmer for a half hour.

However, I’ve been experimenting with cooking them a bit longer – in an attempt to re-create a lentil soup that was served in a hotel restaurant where I worked as a waitress way back in my college years.

So, I cook them in a crock pot and let them simmer for several hours. I also add onions, and depending on my whim of the day – beef or chicken broth. If there are leftovers, I might add some meat chunks, and sometimes I grate some cheese to put on top just before serving. For a creamy soup, you can add milk at the last minute.

Lentil soup makes a hearty, filling meal that tastes good, and is good for you!
